I have been a vegetarian for almost 19 years.  Kudos to you for making the leap, Anon! 

One of my favorite recipes is vegetarian shepherd’s pie.  I substitute lentils for the ground lamb and use vegetable stock to make a nice gravy.  It blends nicely with lots of roasted garlic and chunky root vegetables!
